All the grape varieties are picked on the plot called “Les Gauthières”.

Cultivation Techniques

Biodynamic vineyard, inspected and certified by Demeter France since 2003: we use horn manure (500P), silica (501) and herbal tea treatments. These techniques preserve the indigenous yeasts which contribute to the authenticity and purity of the wines. Our grapes are all picked by hand, sorted in the vineyard and rapidly transported to our cellars in small crates to avoid crushing the grapes, meaning that we need use little or no S02 during vinification.

Grape Variety

Made from a blend of 30% Chardonnay, 30% Savagnin, 30% Poulsard and 10% Trousseau along with a handful of bunches from heritage grape varieties. 100 kgs of dried grapes will give about 15L of juice.

The Wine

Vinification

The bunches of grapes gradually dry out on beds of straw or suspended from the ceiling all winter.
Pressed in February before undergoing a very long fermentation lasting 8 to 10 months, then aged in oak barrels with regular topping-up. No filtration and very little S02 at bottling carried out according to the lunar calendar (a fruit day), sealed with natural fire-branded corks.

Tasting Notes

Amber colour with orange nuances. Deep bouquet with notes of candied orange peel and quince jelly together with a hint of honey. Full and smooth balanced palate providing flavours of dried fruit, with a touch of lime blossom.

Food & Wine pairing

Serve chilled as an aperitif or as a dessert wine with dark chocolate. Delicately accompanies foie gras and sweet and savoury dishes.
