Geography & Terroir

Vines located in the Val de Sorne steephead valley (slopes to the south of Montaigu).
Rhaetian clay-limestone soil.
South/south-east facing.

Cultivation Techniques

Biodynamic vineyard, inspected and certified by Demeter France since 2003: we use horn manure (500P), silica (501) and herbal tea treatments. These techniques preserve the indigenous yeasts which contribute to the authenticity and purity of the wines. Exclusively hand-picked, with sorting in the vineyard and rapid transport in small containers so as not to damage the grapes, fermented without S02.

The Wine

Vinification

The base wines are fermented with natural yeasts and aged without added SO2 in oak barrels and tuns (600L) for at least 12 months.

The drawing takes place during the 2017 harvest with the fermentation must of the year from the same plot.

The must itself provides the grape sugar and the active yeasts. aging on slats for 30 months and disgorging on 20/01/2020 without added SO2 or dosage.

Characteristics of the Vintage

2017 : The frost episode in April deprived us of 40% of our harvest. On the other hand,
the season was then magnificent until the harvest; very low yield and very good
maturity.

Dégustation

Pale gold color, intense nose of dried fruits (almonds, hazelnuts).

Elegant effervescence, fresh attack, notes of brioche bread on the palate and a superb finish.
