Each of these wines originates in a single plot, tended using exclusively biodynamic techniques, sprayed only with herbal teas. The harvest, devatting and bottling are all carried out following the lunar calendar. The wines themselves are vinified without the addition of sulphur and are not filtered.
– Poulsard “En Chôné”: this cuvée brings all of the fruitiness of Poulsard into focus. It is so pure, that you could be biting into a grape! Lightly gaseous, this wine is best decanted immediately before serving.
-Trousseau “Les Gauthières”: This is a powerful, rich wine to be drunk at 16°C with red meat or cheese. It has deep, red-fruit flavours, with notes redolent of spices and undergrowth. Lightly gaseous, this wine is best decanted immediately before serving.
